MAKE AHEAD WHOLE-WHEAT BLUEBERRY PANCAKES

My kids love these. I make them a head and freeze them for a quick breakfast ( just pop them in the toaster) or for a great grab and go snack. You can also enjoy them right off the griddle.



Ingredients

2 cups buttermilk
1 tbsp Canola oil
2 tsp vanilla extract
1/4 cup maple syrup
2 eggs
1 cup whole wheat flour
1/2 cup ground flax seed
1/2 cup oat bran
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1/2 cup frozen wild blueberries

Directions

- In a large bowl mix together buttermilk, oil, vanilla, maple syrup and eggs
- In a second bowl combine flour, flax, oat bran, baking soda, baking powder and salt.
- Add dry ingrediants to the wet ingredients and whisk together unil you get the batter smooth. Gently stir in the blueberries.

- Preheat non-stick fry pan or griddle to medium heat. Use a cup measue to spoon batter into the pan. When finished cooking, place on wax paper to cool. There should be 12 pancakes.

When fully cooled, stack pancakes with wax paper in between and place in a resealable freezer bag. Place in freezer.

MY FIVE PERSONAL SUCCESS PRINCIPLES

On a personal note, I'd like to share my own five personal principles. These are the five that I live by. Yours may be different. The point is this: It doesn't matter if your own principles number one, three, or ten. The only thing that matters is that you have some... that you are guided by something and stand for something.

1. Find something you're passionate about. It doesn't matter what it is, as long as it's legal and moral. It could be cars, stand up comedy, financial services, golf. Find something that you're so excited about, it makes you perspire when you think about it. If you do something you are passionate about, I believe success will follow, because if you love what you do, you will do it well.

2. Treat yourself well. That doesn't mean spoiling yourself with material luxuries. It's not important how much money you make. What's important is how much money you KEEP. If you make a billion dollars a year, but end up owing two billion, you have nothing. You've got to take care of yourself financially.

3. Know the system. To win in life, you've got to know what the system is. To understand money, we must educated ourselves about they way money works. Winning the money game is a way to beat the system. You see, knowing the system is nothing but education. Know the system, work it to the maximum, learn everything you can, and find a way to add value in all that you do.

4. Have a plan. The difference between a vision and reality is a plan. When you get up tomorrow, you might have a vision of where you want to go in your career, or in your l fe. But if you don't have plan for getting there, what will happen? Exactly nothing.

5. Be different and make a difference. This is one of the most important principles to me. There's never been a person who truly made a difference in this world who didn't stant out in some way. Often, they were controversial. But because they were different, they were special. Ther worst thing you can do in your life is to try to be like somebody else. Be yourself, be different follow your heart. And measure your success by the difference you make in the lives of others.

New Recipe of The Week... Creamy Chicken - Apple Chili

My goal is to try one new reciepe a week. I find it is so easy to get caught up making the same stuff all the time... So I thought a fun way to expand my reciepe book would be try one new thing a week. I also find it that moms that are busy are always looking for something new so I thought I would post the reciepes! I hope you enjoy :)

CREAMY CHICKEN - APPLE CHILI

1/4 cup Extra-virgin olive oil
2 pounds chicken tenders, cut into 1/2 inch thick slices
4 tsp chili powder
2 tsp ground cumin
salt and pepper
2 apples, cut into 1/2- inch cubes
1 Onion, chopped
4 tblespoons butter
1/4 cup flour
2 cups chicken broth
3/4 cup milk
Two 15 once cans pinto or white beans, rinsed
2 cups shredded monterey jack cheese (about 8 onces)
Toasted tortillas for serving
chopped scallions, for serving

1. In a large Dutch oven, heat 2 tablespoons olive oil over medium high heat. Add the chicken, chili powder and cumin. Season with salt and pepper and cook, stirring for 5 min; transfer to a bowl.

2. In the same pot, heat the remaining 2 tablespoons olive oil. Add the apples and onion and cook, stirring, until softened, 6 min; add to chicken.

3. In the same pot, melt the butter over medium - low heat. Whisk in the flour for 1 min; whisk in the chicken broth and milk until thickened, 3 min. Stir in the chicken-apple mixture and beans, bring to a simmer, then stir in the cheese. Serve with the tortillas and scallions.
